[Low Carb Recipes] Spicy Grain Free Zucchini Pancakes
Aug 5th 2009 · by Catherine Osthaus
Well, its that time of year again when zucchinis are growing in abundance and garden growers are trying to sneak them into any meal. That is one great thing about this abundant summer squash – it is so sneakable!
Here is a great tasting zucchini pancake recipe that has a bit of a kick to it:
Spicy Zucchini Coconut Pancakes
1 med. zucchini grated and squeezed
4 green onions
3 tablespoons of coconut flour
3 organic pastured eggs
3 tablespoons of coconut oil or butter (melted)
1/2 teaspoon of baking powder
1/4 teaspoon salt
1/2 teaspoon cayenne ( feel free to adjust to taste)
pepper to taste
Coconut oil or butter for frying
Grate zucchini and give it a good squeeze too drain the water. Chop green onions.
In a bowl mix dry ingredients: Coconut flour, baking powder, salt, pepper and cayenne. Mix well. To the bowl add melted coconut oil, eggs, zucchini and green onions. Mix well again.
Melt coconut oil in a skillet and spoon 2 tablespoons of pancake mix into it. Cook pancakes until golden brown. Flip pancake and do the same on the other side.
Makes about 10 pancakes.

sounds so yummy! i love corn fritters and this sounds like a good alternative, plus i am getting delicious patty-pan squash from my garden that would be perfect for this.
These look delicious! But what is coconut flour and where can I get it? Could I use a nut flour like almond flour instead?
Hi Catherine Osthaus,
Those look so good! I’m a big zucchini fan. Definitely going to have to try those out sometime.

linda – I make my own coconut flour by putting desiccated coconut through a coffee grinder. It works great. You can also buy coconut flour at a health food store or online at Amazon (Bobs Red Mill)
Hau – Thank you for the recommendation. I will look into it.
Hi Catherine! I just discovered your website and we seem to have a little too much in common….adrenal issues, thyroid, candida. I wonder if there’s a way to correspond. I am struggling w/ the candida diet and trying to sort out what way to go about it.
Do you have a coffee grinder that you recommend? I am looking for something to handle spices, but I LOVE your idea about the coconut flour! I’d been wondering how to get that for a reasonable price!
Hi Adrienne, I found my coffee grinder at walmart. The brand name is BRAUN. It will last you for years as long as you don’t submerge it when cleaning. My first one got a bit too wet and finally died but I had used it for many years before having to replace it. I grind everything but coffee beans in mine so I am pretty sure it can handle spices.

I tried this recipe a few days ago. I was expecting it to be good, but was surprised how delicious it actually was. It exceeded my expectations. My family and I will definitely make it again in the future.
